Maurice fine tuned his art form during his 15 year ownership of the much acclaimed "Flour Bag" bakery in Lechlade, UK. He went on to replicate this in his own bakery, of the same name, in Florida, USA.
When Maurice is not working overseas as a bread consultant, or in his overseas office on the Caribbean island of Dominica, he is running his gourmet food store in Cheltenham, UK, Maison Chaplais.
Maurice shares the methods developed during these ownerships when working on assignments as a bakery consultant, and as a teacher at the "Foodworks Cookery School".
