Maurice Chaplais is an internationally renowned artisan bread and bakery consultant, with a unique breadth of experience in bakeries, both large and small. Over the last 25 years, whilst running his own highly acclaimed bakery / delicatessen, the Flour Bag in the U.K. and a bakery of the same name in Florida, and currently Maison Chaplais in Cheltenham, he has perfected a vast data base of his own recipes and methods which he shares and teaches when on assignment as a bakery / bread consultant all over the World, and in Foodworks Cookery School in Cheltenham.

He relies on Poolishes, preferments, and, above all, his homemade culture, which is made with the wild yeasts found on Indian Alphonso mangoes. This culture is now operating successfully in many countries around the World where Maurice has worked, producing products of unparalleled quality, flavour, textures and shelf life. He has virtually given up using commercial yeasts, except in a very few products, and then only in the smallest of quantities. Most of the products he now produces take between 1 and 3 days to create, using very slow fermentation, and retarding as much as possible to improve flavour and texture.

These include advice on equipment; the use of Maurice's recipe repertoire perfected over the last 25 years and constantly evolving; the complete training of the staff to enable them to recreate Maurice's renowned products and techniques; bespoke product development.
